I waited till I could find a g19 version I could transfer for purchase. In hindsight, it would have been cheaper to buy one local in g17 and purchase new grips from kel tec for $50.00. That's prob. the better looking route to go vs. cutting.
It's also easier to tell you if we know what generation Sub2000 you have. Gen 1 needs to be cut. Gen 2 can be done with a simple grip purchase from Kel-tec-.
My advice is, once done (as in cut) it can not be undone. Think through it very carefully before doing it. I didnt want to cut mine so I bought the g19 grip panels and made the panel switch instead.
